I still think about this meal often. The steak was cooked to absolute perfection — the kind of perfection that makes you stare at your plate in disbelief. I didn’t even fully know what I ordered, something with truffle fat on top that immediately melted into the meat and then melted in my mouth, and possibly also melted a small part of my brain.

Tried escargot for the first time — bizarre little creatures, but beautifully done. The wine was excellent, the vibe low-key surreal.

I wanted dessert, but my friends insisted we return to Paris. I haven’t forgiven them. I will return, hungrier and more powerful than ever.
