Schedule 2 hours for the meal.
Don't come hungry- you are supposed to examine the food and eat it slowly!
Basis for my judgement:
On my 2 week trip to France, this was the only 1-star michelin I went to, I also went to another (similarly priced) michelin recommended (lower level but in Paris), and a new restaurant that hasn't been reviewed by michelin yet, but is clearly aiming at a similar level. So comparing them:
Oiseau clearly had a higher level of wait-staff and service.
Oiseau garnishing required much more precise knife-work.
The other two establishments went in a more exotic direction with their food, Oiseau's food is a more standard Burgundy Cuisine.
My lunch was 180 euros for the full course + cheese + wine. (I am a big guy)(also a free bread refill)
You won't leave hungry with that, the protions might be small, but that's a lot of portions over the course of 2 hours.
