When I contacted the hotel, a staff member named Cecilia told me that the reservation had been changed and cancelled. I explained that I still had the confirmation email and itinerary, which clearly showed the booking was valid until just the day before. However, she simply kept repeating that the reservation was cancelled, without offering any explanation or assistance.
Hilton Nouméa didn’t even offer an apology. There was no explanation, no compensation, and no accountability. This is absolutely unacceptable for a global hotel chain. Hilton Nouméa handled the situation unprofessionally and irresponsibly—like an amateur. I am extremely disappointed.
En revanche, le service laisse clairement à désirer. L'accueil manque de professionnalisme, le personnel semble souvent se noyer dans un verre d'eau ou peu concerné. Le restaurant et le bar sont très décevants : cuisine basique, sans saveur et les prix qui ne se justifient pas compte tenu de la qualité. On s'attendait à une expérience culinaire en accord avec le cadre exceptionnel, mais cela n’a pas du tout été le cas.
Dommage que le niveau de service ne soit pas à la hauteur du site. Le lieu mérite bien mieux.
Breakfast options were plentiful and tasty. Cheese board was fantastic, very generous with the portions and variety. Dinner buffet was pretty good all things considered (and there were some menu updates for it night by night).
Would happily stay here again!
I loved every little detail. I stayed in one of the overwater bungalows, and it was simply stunning. Everything was beautiful, the service was excellent, and the entire experience was unforgettable. I’ll definitely be recommending it to everyone — and I’ll be back for sure! ????❤️
Food is terrible. Seriously inedible. The customer service is awful. Rude staff.

Tout ça entourée d’eaux bleues, de familles de tortues innombrables ????

The over-water bungalows are amazing, and possibly the cheapest in world given what they offer. (Don’t worry though everything else is super expensive). The positioning is perfect, you will surely see a massive array of tropical fish that roam these waters and you will also get turtles swimming past you, quite regularly I found.
The service was impeccable, the staff were always cheerful and bend over backwards for you. Breakfast is decent. Dinner options are a little limited, the buffet is okay, very expensive but in line with general prices of restaurants on the mainland.
Regular boat services back and forth from Noumea means you can pop back there for dinner. Not that we did, it was quite hard to actually leave the rooms here and when you do, the island has plenty to offer.
No hesitation recommending this hotel. Tips, try staying between Monday - Thursday at the moment as it’s pretty quiet and don’t bother staying in the garden bungalows. You do not want to be in those they are the inferior product here. Weekends become very busy which is understandable, lots of day trippers and lots of boats plonk themselves in front of the villas for the sunset. Visually this enhances the view but it infringes a little on the privacy of the balcony at night as some come as close as 200m and stay until morning. However if that sounds like something that would put you off they have a few super private villas that are up the far end of the resort. Probably highly sort after but definitely worth asking for at the time of making your booking.
We absolutely loved our stay at this hotel, If you’re tossing up between Hamilton Island and here for a getaway, this is an absolute no brainer.
Pro tip: bring your own drinks, as much as you can carry. And as other reviewer suggested a 5 star picnic (something unfortunately I didn’t do)
Excellent breakfast buffet and dinner options, small but decent gym, kayaking and activities readily available. Staff are warm and helpful, security onsite, service is top tier.

Food is OK, not 4 or 5 star, but simple, and recommend to bring own 5* picnic
Staff are ace, so friendly and accommodating, and speak English enough, some are fluent making easier for us non french speakers.
2 nights probably max as very little else to do at night. Only so many times to swim with fishes
As to the negative reviews "too far to walk", they must be very lazy as only take 5-7mins walk to restaurant from furthest bungalow and there appears to be a cart service if needed.
Customer service via email is patchy (poor!), they emailed me to tell me my boat time, 90 mins after it had left ! Otherwise they are great.
Not a 5* resort really, but it's fantastic anyway for the sea life .
