From the welcome appetizer to the salad, red mullet, Bresse stuffed chicken breast, cheese, and dessert, every dish was perfectly cooked with tender textures and balanced flavors—never too salty or greasy.
The crab meat was served beneath a layer of mashed tomato, complemented by fresh basil, pesto, sweet cherry tomatoes, and pine nuts. These ingredients harmonized beautifully to highlight the crab’s delicate flavor and texture.
Each subsequent course elevated the meal further.
The red mullet fish impressed me the most. Cooking fish perfectly is a challenge, as it can easily overcook in just a few minutes. Here, the fish was nearly flawless, paired with a light, flavorful fermented black garlic sauce. The asparagus was elegantly drizzled with seafood crumbs and topped with airy egg foam that burst with flavor and melted on the palate.
The stuffed chicken portion was generous, with the cognac sauce and mushrooms adding rich highlights to the dish. Presentation throughout was exquisite.
Wine prices were very reasonable, marked up only 30-50%, a refreshing contrast to the typical 2-3 times markup in North America. They even offer Romanée-Conti in their wine list.
Service was attentive, warm, and detail-oriented. The restaurant is located in a peaceful neighborhood with ample free parking just across the street.
A special moment was seeing Guy Lassausaie, the chef and owner, as we left. It was a shame we didn’t get the chance to greet him and express our appreciation for the meal.
Overall, it was a memorable dining experience. I recommend this restaurant to anyone willing to drive about 30 minutes from Lyon’s center.
