Next, the service. Warm, professional, made us feel so welcome- Roman is an incredible host. Usually I do not get the wine pairings as they dumb them down to common things, but Roman served us a grower-producer champagne I have not seen in the US, and really interesting local wines that are not exported.
Then the food- was a tasting menu, but they brought so many little extras between courses. The standout dishes were a lobster and spelt, their signature dish, and this incredible confit of tomatoes. There were no losers in the menu. Much better than the 1-star Michelin restaurant at the Chateau St Martin. I care so much about eating well, and do so much research before trips- If you are like-minded, please go to this restaurant. A joyous meal in every way.
