The experience was good, though I had hoped for great based on the reviews. The menu is creative and built around local ingredients, with several interesting options. Unfortunately, the starters fell short – the croquette was undercooked and the courgette farcie lacked flavor. The mains were better: the beef was excellent, though the panzanella with the tuna tasted a bit tired. Service could use improvement; it was hard to get the waiter’s attention, and some basics (like a spoon for the courgette) were missing. While the wines were lovely, the overall value didn’t match the price – 35–37 euros for rustic mains that missed the mark in execution and taste made the meal feel overpriced.

Canon is a must-visit for anyone seeking a truly authentic dining experience in Nice. The wine selection is good, with a strong emphasis on natural and biodynamic producers, perfectly curated to match the cuisine. You can enter a wine cellar and choose your own bottle.
Service is knowledgeable but relaxed, creating a warm, unpretentious atmosphere that’s increasingly rare. Whether you’re a local or visiting the Côte d’Azur, Canon delivers a taste of modern Niçois dining at its best.

Belle découverte j'ai réservé par erreur et quel grand bien m'a pris !!!
De produits frais, locaux chaque plat nous à été expliqué avec les provenances des produits. Les associations dans les assiettes sont aussi étonnantes que réussite.
Patron (je pense) discret, souriant sans être trop présent (juste ce qu'il faut) derrière l'assiette et c'est ce qui nous correspond aussi donc parfait !!!

Alt er på fransk. Intet vinkort. Maden god men jeg ville foretrække overblik over mad og vin fremfor oversættelse som ikke er optimal, meget tradionelle retter
