This restaurant is so classic that of course I had to make a reservation (online) on this visit to Paris. I received three gentle reminders of our reservation. The experience began when we arrived, and my name was on a handwritten list in the maitre d’s hand. He welcomed us warmly, and we were seated downstairs at a table for two, seated side by side, from where both of us could watch the evening unfold in front of us. The service was professional, and just a tad cheeky; it’s like watching a ballet as they weave in and out, attentive to every need. We ordered the salade de haricots vert froids to share, and it was outstanding, with a creamy mustardy sauce, hazelnuts and chunks of Parmesan. We also both ordered the special of the day: pavé boeuf au poivre (the other special, haddock, was unavailable). It was tender, like butter, peppery as advertised, perfectly cooked, with a peppery sauce and just-right frites. We also ordered a Bordeaux which had a delicious nose and paired perfectly with the steaks. We didn’t have dessert or coffee, but no one rushed us as we lingered over wine, and in fact they brought another carafe of water to the table as if to invite us to stay. Of course, the ambiance of this restaurant is beautiful and the staff and diners bring it alive. This was an exemplary dining experience.
