数十年潰れないで続いていることが素晴らしい。前世紀の終わり頃に初めて訪問した時は、立派な髭を生やした店長が日本の「フィガロ」誌に記事が載って日本人が観光客が大勢来たと喜んでいた。伝統的なフランス料理とは少し異なる鴨のコンフィに感動したことを覚えている。前菜のスープがお代わり自由というのも太っ腹だった。数年前に再訪した時には、初回訪問時の若いウエイトレスさんが風格のある店長になっていた。前の店長はバスクに戻ったということである。皿はより洗練されて（その分野趣に欠ける嫌いがある）、より高くなっていたが、行く価値のある店である。

Long standing, over 30 years, Basque classic gastronomic bistro in Paris 3rd district that still serves such unique dishes as Lievre a la Royale and genuine French basque specialties. Appropriate selection of wines and attentive service complement its attractiveness.

After two weeks of traveling from the US, I can confidently say that this restaurant provided the best food, wine, service, and ambiance I've experienced not just in France, but anywhere! From the moment I walked in, the warm and attentive service made me feel like a valued guest. The menu was extraordinary, featuring fresh, local ingredients crafted into the most delicious dishes I've had in years. Each course was paired perfectly with exquisite wines, elevating the experience even more.
The ambiance was pure charm, intimate yet vibrant, and made the meal feel like a special occasion. Whether you're a foodie or just someone who enjoys great dining, this place is an absolute must-visit. I truly cannot recommend it enough! It's a culinary gem in the heart of Paris that I will be dreaming about long after my trip. Simply outstanding!
