We began with the oyster dish, which was well-balanced and a pleasant start to the meal. However, the main courses fell short. The grilled octopus was enjoyable where it was charred and crispy, but the thicker parts were undercooked to the point of being nearly raw. The lamb dish was particularly disappointing—overly fatty with a strong, unpleasant taste, and the accompanying vegetables were barely cooked, lacking both texture and flavor.
The wine was acceptable, though the champagne was served warm, which detracted from the experience. Service was friendly, and the staff clearly meant well, but they appeared inexperienced: the wine list was never offered, wine was spilled at the table and wiped with a hand, and the chef hurriedly ran up and down the stairs, at one point nearly colliding with me.
Les Résistants has potential, especially given its beautiful interior and atmosphere, but the food execution and service need refinement to match the promise of its setting.
